rainbow cupcakes


the other day, i made some rainbow cupcakes!
i loved the idea, so i decided to give it my best shot.
they actually turned out really good!
it was extremely time consuming to get the colors mixed up, not to mention really messy. {but maybe that's just me...?}

the turn out was pretty cool though.
i wish the colors could've been brighter.
oh well. next time!
i used a recipe from the betty crocker cookbook, just using white cake mix.


so, would i make them again?
yes. i'd just have to make sure i had plenty of time.






-silver white cupcakes-
{leah's revised version}

2 1/4 cups all purpose flour
1 2/3 cups sugar
2/3 cups shortening
1 1/4 cups milk
3 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla
5 egg whites

heat oven to 350 degrees.
put cupcake papers in your tins.
{it makes about 17 cupcakes}
beat all ingredients except egg whites on low speed, scraping bowl constantly , 30 seconds.
beat in egg whites on high speed, scraping bowl occasionally, two minutes.
pour into tins.
{in my case, add color, before putting in the tin. obviously.}
bake until a wooden pick inserted in center comes out clean.

for the color, i divided the batter into 3 bowls i knew we didn't care about & made pink, purple and blue.

Mmmmm.... We usually stay away food coloring when we can, but I bet those were really good. :D

lindsay, they were pretty tasty! i would make them again for sure!
katherine, i know. i don't usually make stuff with food coloring. but once in a while it should be ok. :]
