chocolate filled wontons


we made these a few days ago, and let me say: they were so good!
it's not really a traditional christmas cookie, but we decided they were so delicious, they were one of our favorites, ever!
i got the recipe from everyday food magazine.
i decided it looked interesting & different, so we went to the grocery store & got the wonton wrappers.
here's the recipe: chocolate filled wontons

so, i was very satisfied with these, but instead of vegetable oil, i used coconut oil,
which is much more healthy.

christmas eve


today is the day where i wake up excited.
{tomorrow even more so!}
dcorate the last of the cookies.
do laundry. boo.
wrap the last presents.
{whew!}

go to the 4:oo church service.
go to grandma Kay's christmas.
{at my cousin amy's house.}
Christmas totally snuck up on me this year.
the older you get, the faster time goes.
at least that's what i've heard.
but now i'm ready.

two nights ago we made delish sugar cookies.
yummo. especially with icing.

my baby brother will be 11 on the 6th!

i have to be honest: monday is usually not my most favorite day.
i mean, you've just had an amazing {and possibly very snowy} weekend & bam!
back to reality.
school.
{i got this headband a while ago. & i love that it looks like a hat, but is still a headband. you can sorta see it. love it.}

but, this monday is the last monday before christmas break!
huzzah!

right now, i love listeningto owl city.
it makes me so happy each time i listen.
favorites: cave in, dental care, hello seattle remixxxx, saltwater room. okay, i love them all!

blizzard.

lacey was really upset that she couldn't go outside.


she spent a lot of the day in the laundry room drying off from her morning outside. she was covered on small snowballs. i had to run warm water on her {which turned into a bath} to get all the snow off!



it's blizzard conditions here, people.
we're quite literally snowed in.
i waded through the snow (that was up to my
thighs in some places) to try to get to the mailbox.
only to find that our mailbox fell off the stand. {plow truck?}
so, i floundered back to the house.
things are so snowy, that they've closed a major highway by us. & our church cancelled all it's services.
so, today we spent the day wrapping presents and hanging out with lacey. who went bonkers about every 15 minutes. squirrels are her enemies. they hang out around our deck.
but, since the drifts were/are about 10 times as tall as her, we couldn't let her out.
i think we'll be snowed in tomorrow too. {we can't use our plow since my dad is gone}

i'm praying my daddy & brother get home safe!

december 7th, 2010

i really need to post more! i can't believe how much i've been slacking!
it's horrible, but i really haven't been taking photos with my camera.

so i guess i'll fill you in on what life has been like.
{without photos. boo.}
on friday we had our annual cookie exchange.
yay yay yay fun! seriously.
emilia & i went to tangled on saturday!
if you're questioning going, just do it! i lovedd it. a lot.
thenn later on sat, we went to the wild woods of wisconsin to find our perfect charlie brown tree.
& then on sunday my gram came over for a birthday breakfast brunch!
we had lots of good food & laughs.
& then we decorate the tree.
so. so much for a quiet weekend. haha like i would want one anyways. :]

oh yeah on thursday emilia & i hosted our first 4h meeting. success?
i think all the kids enjoyed themselves, & the game we played was hilarious.

thanksgiving


since the day after tomorrow is thanksgiving, i'm going to say what i'm most thankful for.
considering that i have soo much to be thankful for!

i have a wonderful family.
i have lots of wonderful friends.
i have a pooch. she's cute.
i live in america.
i have enough food to eat each day. & clean water.
i am able to get an education.
i'm reallyyyy thankful for my big comfy supersoft bed.
i can make cranberry salad with my grandma.

i almost always take for granted the most simple things.

After what seems like ages of working on this painting, it's finally done!
yay!
i am so happy with how it looks.
i drew this at the art class i take. {which i've probably previously mentioned}
it's so fun & it's fulfilling to see what your hard work can do.
so for weeks & weeks, this is what i've been drawing/painting!

hopefully lacey's head wont get too much bigger then it already is.


p.s the world around me is now white! i can't believe there's snow!

trampoline

i sorta wish i had one.
we did, before we moved to our "new" house.
{which we've lived at for about 5 years.}
i miss it. we always had so much fun on that thing.

but, next door my cousins have a tramp, though.
we can go use it anytime we want. so it's all good.

question


so. trying to find a good pair of headphones.
i've heard that skull candy is the best, for looks and sound.
{these fold up too! awesome or whatttt??}
plus, the price isn't too off the wall.
{bose may be the best, best, but for a couple hundred bucks? nope.}
any advice?


{not really a fan of skulls myself, but if these are as good as they seem, i don't mind. :]}

rainbow cupcakes


the other day, i made some rainbow cupcakes!
i loved the idea, so i decided to give it my best shot.
they actually turned out really good!
it was extremely time consuming to get the colors mixed up, not to mention really messy. {but maybe that's just me...?}

the turn out was pretty cool though.
i wish the colors could've been brighter.
oh well. next time!
i used a recipe from the betty crocker cookbook, just using white cake mix.


so, would i make them again?
yes. i'd just have to make sure i had plenty of time.






-silver white cupcakes-
{leah's revised version}

2 1/4 cups all purpose flour
1 2/3 cups sugar
2/3 cups shortening
1 1/4 cups milk
3 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla
5 egg whites

heat oven to 350 degrees.
put cupcake papers in your tins.
{it makes about 17 cupcakes}
beat all ingredients except egg whites on low speed, scraping bowl constantly , 30 seconds.
beat in egg whites on high speed, scraping bowl occasionally, two minutes.
pour into tins.
{in my case, add color, before putting in the tin. obviously.}
bake until a wooden pick inserted in center comes out clean.

for the color, i divided the batter into 3 bowls i knew we didn't care about & made pink, purple and blue.

fall hayride

each fall my aunt and uncle host a huge fall hayride. there's tons of glorious food, music & hayrides! every year, anna and jessie come along, also. {since they're pretty much family anyway.} every year, it's so much fun.
i enjoy it immensely!



this year, we discovered the corn field!
it was so cool in there! we got some really good photos.








oh, yeah and before we went, i made chocolate frosting!
which goes extremely well {maybe too well} with animal crackers!
